・Scientific name:Richardella dulcifica(Synsepalum dulcificum Daniell)
・Origin: West Africa
・This red fruit contains the protein called miraculin. If you eat a sour food immediately after eating the red fruit, an electrical signal of sweetness will be transmitted to your brain even though you taste a sour food. It is because the miraculin is bound with a key hole of sweetness.
・Effect duration: about 2 hours( about 1 hour in a frozen fruit)
・Miraculin is vulnerable to heat because it is protein. Accordingly, miraculin is required to be preserved in frozen. Miraculin is approved as a harmless additive(an existing additive) by the Ministry of Health and Welfare.
